Keto Brownie

Before I made this recipe, I used to buy the packet mix Noshu Fudgy Brownie Mix from Woolworths or Coles and it was a delicious snack which helped me through the tougher days at work! The Noshu mix is 5 net carbs per serve and 92 calories… and is a sticky fudgy amazing delight!

This Keto Brownie is a miniscule 1.3 net carbs and 136 cals and ends up with a slightly fluffier texture (less dense..? don’t judge me!) but just as delicious!

If you are trying to stay under 20 net carbs – you will want to try this recipe! If you are wanting to watch your calories and are looser on your carbs then give the Noshu Fudgy Brownie a try… Or better yet make both and compare for yourself!

Ingredients List

Butter9 Tablespoons (130g | 4.5oz)
Cocoa Powder4 Tablespoons
Almond Flour1/2 Cup
Egg (large)3
Baking Powder4 teaspoons
Dark Baking Chips (Noshu)4 Tablespoons (50g | 1.76oz)
Monk Fruit Sugar1/2 Cup
Walnuts60 grams (2.11oz)

How I Cooked It

Step 1

Heat oven to 180C or 350F and line the tray with baking paper.

(I have tried this with a non-stick tray without baking paper and let’s say it didn’t go well! I took one for the team for all of us!)

Step 2

Add the cocoa and monk fruit to melted butter.

Step 3

Add eggs and stir. (Just make sure the cocoa mixture isn’t too hot or you will cook the eggs!!)

Step 4

Add the almond flour and baking powder to the mixture and stir!

(I know this is a lot of stirring but it is worth it! Trust me!)

Step 5

Halve the walnuts and break them up to add to the mixture, add the choc chips in too!

Step 6

Add mixture to your lined tray, top with walnuts and bake for 15-20 minutes depending on your oven and the size of your tray… so I like to check at the 12-minute mark.

(If you are browning on the outside but not cooking in the middle, cover with foil)
