The jalapenos add spice, and the cream cheese perfectly counteracts it! I generally purchase the sliced pickled jalapenos from Coles or Woolworths, but you can use fresh if you are growing them in the garden!
This meal is fantastic stored as a frozen prep meal and re-heats well from frozen without splitting.

Keto Jalapeno Chicken Bake
Ingredients
- 1300 grams Skinless Chicken Breasts
- 450 grams Cream Cheese
- 180 grams Jalapeno peppers
- 290 grams Cheddar Cheese
- 40 grams Olive Oil
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Black pepper
- Salt to taste
Instructions
- Pre-heat the oven to 180C
- Season chicken with salt, garlic, onion, and pepper and heat oil in pan
- Fry chicken until lightly brown
- Layer a glass oven proof baking dish with cream cheese
- Layer with the browned chicken
- Layer with cheese
- Then top with Jalapenos
- Wrap with foil and bake covered with for 20 minutes
- Remove foil and bake uncovered for the remaining 10 minutes (looking for golden brown edges).
- Let stand for a few minutes before serving
