This is my absolute favourite keto meal! The calories are high on this dish so it’s important for me to take that into account otherwise I undo some of my hard work!

The jalapenos add spice, and the cream cheese perfectly counteracts it! I generally purchase the sliced pickled jalapenos from Coles or Woolworths, but you can use fresh if you are growing them in the garden!

Ingredients

  • 1300 grams Skinless Chicken Breasts
  • 450 grams Cream Cheese
  • 180 grams Jalapeno peppers
  • 290 grams Cheddar Cheese
  • 40 grams Olive Oil
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Black pepper
  • Salt to taste

Instructions

  • Pre-heat the oven to 180C
  • Season chicken with salt, garlic, onion, and pepper and heat oil in pan
  • Fry chicken until lightly brown
  • Layer a glass oven proof baking dish with cream cheese
  • Layer with the browned chicken
  • Layer with cheese
  • Then top with Jalapenos
  • Wrap with foil and bake covered with for 20 minutes
  • Remove foil and bake uncovered for the remaining 10 minutes (looking for golden brown edges).
  • Let stand for a few minutes before serving
